As a result of over 2,000 years of cultivation, there are now over 50 varieties of kale.* Curly Kale - this is one of the most recognizable varieties... it's available in most grocery stores, sold in bunches and usually bright or dark green and also purple in color. The leaves have tight ruffled edges and thick fibrous stalks.* Dinosaur Kale (Lacinato Kale) - this variety has dark blue-green, wrinkled firm leaves. The are tall and narrow shaped with a slightly sweeter and more delicate flavor than Curly Kale.
