    * Curly Kale - this is one of the most recognizable varieties... it's available in most grocery stores, sold in bunches and usually bright or dark green and also purple in color. The leaves have tight ruffled edges and thick fibrous stalks.

    * Dinosaur Kale (Lacinato Kale) - this variety has dark blue-green, wrinkled firm leaves. The are tall and narrow shaped with a slightly sweeter and more delicate flavor than Curly Kale.

    * Red Russian Kale - this variety can have a red tinge and a reddish-purple tinge to the stems. The leaves are fringed leaves that resemble big oak leaves, large arugula leaves or the outer leaves of a mature cabbage. This kale variety is often described as sweet and mild in flavor with a touch of pepperiness. The stems are tough and woody, remove them before cooking as they can cause an upset stomach.
